The grapes are hand harvested and destemmed before they are direct pressed to tank. The wine ferments for 2-3 weeks and is then transferred to grolsch-top bottles to finish fermentation in bottle as a rosé pet-nat. The wine is not disgorged and zero sulfur is added.
